Paolo Monti is the executive chef of Gaia Ristorante, one of the top Italian restaurants in Hong Kong, located in Central. He is from Rome, and has headed Gaia’s kitchen since the restaurant opened almost two decades ago, delighting diners with his contemporary Italian cooking. Before coming to Asia, Paolo spent seven years gaining experience working with a number of leading Los Angeles restaurants, notably as sous chef to the legendary Mauro Vincenti at the famous REX il Ristorante, then as chef at Louise’s Trattoria and the Alto Palato Trattoria. Since settling here he has become a valuable member of the Gaia group; as executive chef, he has significantly contributed to the opening of the their prestigious, upscale restaurants in Shanghai and Beijing, too.
