UMBERTO BOMBANA

After attending culinary school near Bergamo, Umberto Bombana trained under Ezio Santin (Antica Osteria del Ponte, Cassinetta, Lugagnano (Mi)) and then spent 10 years working in Los Angeles. In 1993 he was invited to Hong Kong to open Toscana at the Ritz-Carlton. The hotel was demolished in 2008 to make way for the building of the China Construction Bank and Umberto Bombana decided to open his own restaurant, 8½ Otto e Mezzo Bombana in January 2010, its name a tribute to “8½”, the 1963 autobiographical movie by his favorite Italian film director, Federico Fellini. Umberto Bombana has been a prime mover in introducing the white truffle to Hong Kong’s restaurant scene and the city’s participation in the annual World White Truffle of Alba Auction. In 2006, Piedmont’s Regional Enoteca Cavour appointed him as their International White Truffle Ambassador, and on 13 November 2011, 8½ Otto e Mezzo Bombana hosted the Hong Kong bidders for the annual World White Truffle of Alba Auction, linked by satellite to the Italian auction grounds.
